“To be tempted and indulged by the city’s greatest chefs. It’s the dream of every one of us in love with food.”
~ Gael Greene
Executive Chef Jonathon Olinger
A native of Saltville, Virginia, Chef Jon Olinger is the Inn’s rising star, bringing youthful energy and a surprising wealth of culinary experience and knowledge to the proverbial table. Jon learned the business from the ground up, starting as day shift kitchen manager at the Peppermill Restaurant in Abington, Virginia and going on to become Executive Chef at The Country Club of Bristol in Bristol, Tennessee before bringing his culinary savoir-faire to the Smithfield Inn. Jon’s forte is regional fare and he’s introducing Southern Fusion Cuisine—classical Southern dishes with influences from France, and Italy—to the Inn’s varied menus.
“I like a cook who smiles out loud when he tastes his own work. Let God worry about modesty. I want to see your enthusiasm.”
~ Robert Farrar Capon
